This wine is closely linked to the tradition and terroir of the Etna territory. The oenological techniques used enhance the varietal characteristics of the vines used. Its personality, elegance and sensory complexity are closely linked to the particular terroir. The very mineral taste resembles lava and volcanic sands. This wine was bottled for the first time in 1982 and continues to be the most important product for our company.
Destemming and crushing of grapes. Maceration at controlled temperature (28-29 ° C) with selected yeasts in stainless steel vats for 7-8 days. After racking the wine is aged for 6-8 months in the typical chestnut barrels of Etna (capacity 30-130 hl) and then assembled and racked in the underground cellar where it rests in stainless steel vats until the moment of bottling which is carried out several times, after at least one year from the harvest. After bottling, the bottles are aged for at least three months.
